Aside from listening to your accents (which as an American I have a mysterious attraction to), I liked the info you imparted on cuts of meat, the perfect temp of a steak, the dangers of bacteria, etc.

Not that I’ll be cooking with a vacuum cleaner or a blowtorch ever- I’m one of those medieval sorts…

@Leonard – Yeah, alcohol totally screws up just about every kind of spherification. I tried doing Creme de Cassis with agar a while ago – no joy at all.

Hmm – I feel the subject of a mini-episode, or at least a blog post, coming on.

I don’t know if reverse spherification would work better. Did you try increasing the amount of sodium citrate in your alginate solution? That’s how I got the Creme De Cassis pearls working in the end – fragile but there.

@Louise (and Bill)- Yeah, more than one probe is a really good idea if you can, although provided you stir the bath frequently you should end up with a pretty even temperature.

The Guide to Sous-Vide in the links section offers some interesting science in the direction of heat conductivity and temperature gradients. One thing you could try to reduce the cooking time, wierdly, would be to microwave the steak first, for a very short period of time.

Don’t worry, this is actually a very safe procedure. Mostly. Usually. Although I probably shouldn’t point Bill to the temperature controlled waterbath I made with a PID controller and a slow cooker…
